Answered my own question after browsing through cflex.net - what a great resource!
For anyone interested, check out the Beginner Tutorials section of cflex.net, and then the "Intro to Flex 2 with Coldfusion Remoting" tutorial. This gives a very nice layout of both sending and receiving between Flex2 and CF7.02. Worked great - moving right along...
