This does not seems to work for me in Flex 4:  Tried changing it in the CSS and 
on the textInput control.  Its still white!

I'd make sure you have the latest nightly Flex 4 SDK build from 
http://opensource.adobe.com/wiki/display/flexsdk/Download+Flex+4
