There is no "easy way", like declaring a number of columns for a block. You have to declare a column-count of 2 on an appropriate page master, and put span="all" on all bocks but the ones you want to have typeset into two columns. Okay, so fo:table is not appropriate. Its not possible to set columns for just one block?
