Choosing the italic style of Minion Pro Regular should yield the true italic when displaying, printing, and/or creating PDF. As I said, try a simple sample and prove this to yourself. You aren't going to print to that Océ printer directly, but rather, via a PDF file. Create the PDF file and see what's there both visually and via Ctrl-D and check the font listing.
