From the Recipe Goldmine website... ~ Grand Chocolate Chip Cookies 1 cup butter 1 cup granulated sugar 1 cup packed brown sugar 2 eggs 2 teaspoon vanilla extract 2 cups all-purpose flour 2 1/2 cups oatmeal (run through blender) 1 teaspoon baking powder (add to oat powder) 1 1/2 teaspoons baking soda 1/2 teaspoon salt 12 ounces chocolate chips 1 (4 ounce) Hershey candy bar, grated 1 1/2 cups chopped nuts Heat oven to 375 degrees F. Cream the butter, sugar and brown sugar. Add the eggs and vanilla extract. Mix together the flour, oatmeal, baking powder and salt. Add the chocolate chips, Hershey candy bar and chopped nuts. Bake on ungreased cookie sheets. Use a tablespoon of dough for each cookie and place 2 inches apart. Bake for 12 to 15 minutes. Watch carefully. From the Recipe Goldmine website... ~ Rancho Tejas Chicken Fried Steak Source: Pat and Chris McCarley - Rancho Tejas Restaurant - as published in Southwest Food Service News Marinade: 1/2 teaspoon Meat Tenderizer 3 cups water 1 cup buttermilk Flour Breading: 2 cups all-purpose flour 1 tablespoon salt 2 teaspoons black pepper Cream Gravy: Pan Drippings (1/2 cup from each steak) 2 cups chicken stock 2 teaspoons salt 1 teaspoon black pepper 2 cups milk Select six bone-out round steaks no thicker than 3/4 of an inch. To make marinade, dissolve meat tenderizer in water, add buttermilk and whisk with wire whip for 30 seconds. Place steak in mix and refrigerate two hours. Drain marinade from steaks and cut each steak into three pieces along fat lines. Fill frying pan with 1/4-inch of vegetable oil and heat on medium high. Bread steaks in sour dough wash. To make the wash, combine two onion slices with a slurry and let stand for 24 hours beforehand. After breading steaks in this, bread them in flour breading, then fry until golden brown. Let steaks drain on wrapper towel, keeping drippings for cream gravy. To make gravy, mix drippings with flour breading and whip into a roux. When hot add onion, bell pepper, and garlic. When vegetables are almost tender add shrimp and stir fry for about 30 seconds. Add tomato, tomato sauce and chipotle. Southwestern Eggs 1/4 cup corn 1/2 cup green bell pepper, diced 1/2 cup onion, diced 1 cup fresh tomato, chopped 1 teaspoon black pepper 1 (4 ounce) can green chiles, diced 6 eggs 1/2 cup Cheddar cheese, grated Salsa Corn tortillas In a baking dish, mix together the first six ingredients. Microwave on HIGH, covered, for 5 minutes. Stir mixture and then break eggs over the top. Pierce each yolk and egg white at least once. Combine cheeses and sprinkle on top. Cover dish, return to microwave and cook on HIGH for 3 to 5 minutes or until the eggs are done. Let stand for 3 minutes. Serve with warm corn tortillas and side of salsa. Apple Crunch Coffee Cake Yield: 8 servings 2 c Bisquick baking mix 2/3 c Milk or cold water 3 tb Sugar 1Egg 2 c Apples (about 2); pared and thinly sliced STREUSEL TOPPING 2/3 c Bisquick baking mix 2/3 c Brown sugar; packed 1 ts Ground cinnamon 1/2 ts Ground nutmeg 1/4 c Firm margarine or butter GLAZE 1/2 c Powdered sugar 2To 3 teaspoons milk Heat oven to 400 degrees F. Grease 13x9x2 inch baking dish. Mix together bisquick baking mix, milk, sugar, and egg; beat vigorously 30 seconds. Spread half of the batter in pan. Arrange apple slices on batter; sprinkle with half of the Streusel Topping. Spread remaining batter over apple slices; sprinkle with remaining topping. Sprinkle with nuts. Bake until wooden pick inserted in center comes out clean, about 25 minutes; cool. Drizzle with glaze. STREUSEL TOPPING: Mix baking mix, brown sugar, cinnamon and nutmeg, cut in margarine until crumbly. GLAZE: Mix powdered sugar and milk until smooth and of desired consistency. Shrimp and Crab Au Gratin 1/2 cup (1 stick) butter 1/2 cup all-purpose flour 1/2 cup whole milk 1/2 cup dry white wine 1 lemon, juiced Salt 1/2 teaspoon black pepper 1/8 teaspoon cayenne pepper 1 pound small or medium shrimp, peeled and deveined 1 pound claw crabmeat, picked through for shells 1 1/2 cups grated sharp Cheddar Melt the butter in a heavy-bottomed saucepan over very low heat. When the butter is completely melted, stir in the flour with a wooden spoon. Cook for about 1 minute over low heat, stirring constantly. Slowly add the milk. Using a whisk, stir briskly until you have a smooth sauce, about 2 minutes. Add the wine, lemon juice, salt, black pepper, and cayenne and whisk again. Switch to the wooden spoon and keep stirring the white sauce until it is completely smooth and thickened, about the consistency of mayonnaise. Remove from the heat. Bring 2 cups water and 1/2 teaspoon salt to a boil in a medium saucepan and add the shrimp. When the water returns to a boil, cook the shrimp for 1 minute. Drain immediately. Roughly chop the shrimp and put in a large mixing bowl. Add the crabmeat and, with your hands, toss gently to mix. Pour the sauce over the seafood. With a large spoon, gently combine, taking care not to break apart the crabmeat. Spray an 11 by 7-inch casserole dish with vegetable oil cooking spray. Pour the mixture into the pan. Place the grated cheese on top, completely covering the seafood mixture. Roasted Tuna with Tomatoes 1 (2 1/4 lb.) tuna fillet 1/3 cup extra-virgin olive oil 1 large red onion, thinly sliced 3 large garlic cloves, chopped 1 1/2 pounds plum tomatoes, halved, seeded, chopped 1/2 teaspoon ground cloves 1/2 teaspoon ground coriander 1 teaspoon dried oregano 1/3 cup white wine vinegar Preheat oven to 250F. Sprinkle tuna with salt and pepper. Heat oil in ovenproof pot over medium heat. Add onion and saute 6 minutes; add garlic and cook two minutes more. Push onions and garlic to side of pot. Add tuna and saute until brown on all sides, about 12 minutes. Scatter tomatoes, oregano, cloves, and coriander around tuna. Sprinkle with salt and pepper. Pour vinegar over fish. Bake tuna uncovered until thermometer inserted into center registers 145F for medium-rare, about 12 minutes. Transfer tuna to platter. Spoon tomato sauce over. Cool to room temperature.
