That's because nobody has decided to implement that feature in the installer (which was just completely re-done and simplified). I seem to recall the pc-bsd installer does some/all of this. and you can use it to just install freebsd if you dont want the pc-bsd desktop stuff. I havent actually every tried it though so YMMV.
