I am always getting confused with what is the correct entry to use.

Are you sure you really want stable?

RELENG_6 is a STABLE branch i.e. a stable *development* branch

RELENG_6_1 is a security branch, i.e it's the 6.1 release plus bug fixes.

RELENG_6 stands for STABLE branch of 6 (6.1-STABLE)
RELENG_6_1 stands for SECURITY branch of 6 (6.1-RELEASE)

If you want 6.1-RELEASE, then RELENG_6_1 is correct. If you want -STABLE
(As in more stable than -CURRENT), then RELENG_6 should be right.
