Thanks for everyones help. It was a lot easier to do than I thought.

I now have 20GB HD as my boot (primary master), 120GB for my music 
collection (primary slave), DVD drive (secondary master) and a 20GB 
(secondary slave) where the zip drive was.

It took less than 20 minutes to put it all in and worked first time. I had 
to mod the optical/zip bracket so I could connect the third hard drive up, 
but it works fine.

I will at some point be putting a 40GB in (and cloning from the boot), in 
place of the 20GB boot just to give OSX and my apps a bit more breathing 
room.
