In Leopard at least, you can use Disk Utility to eject a disc that isn't mounted on the desktop. Just start Disk Utility from /Applications/Utilities, click on the CD/DVD and then click Eject at the top. Or you can reboot and hold down the keyboard eject key and/or the mouse button. All three should work. All CD/DVD/CDRW drives in all G3 slotload iMacs (350-700 MHz) are interchangeable. If all else fails, you can remove the optical drive and remove the top to gain access. I've written about how to do this in past iMac list posts.
