THE GOYA JOURNAL :: Photo Essay :: A Poie for Your Thoughts http://www.goyajournal.in/blog/a-poie-for-your-thoughts *Aparna Nori documents the dying art of handmade bread-making in Goa. * On my first visit to Goa 20 years ago, I remember being woken up in the morning by a curious ‘poink-poink’ sound. A walk down the village road following the sound led to my discovery of the *Poder*, the local baker. Goan community is traditionally rice based and the practice of eating local Goan favorites like Xacuti and Sorpotel with freshly baked bread started only in the early 17th century. The Portuguese Jesuit priests, introduced a few families of the Chaddo community in the Salcete region, to the art of leavened bread and the profession since then passed down generations, across to families from other communities as well. I spent a few days in search of bakeries that still bake the traditional way. There are few left, struggling to keep them working. Many converted to selling machine based bread or sold their businesses to non-Goan families and migrated in search of opportunities elsewhere. But for the moment the ‘poink-poink’ of the poder’s cycle horn continues to be a familiar sound, at least in the small villages. The aroma of the freshly baked flat pita like poie, scissored and butterfly shaped katriche pao, soft and chewy pao, hard and bangle shaped kankana welcomes me each time I visit, and evokes a feeling of home. PHOTOS The bakeries are a part of the main house where the family lives. Most are dark and dinghy spaces with every inch covered by soot and dough. The heat of the oven is overwhelming, but work continues without a break for 3-4 hours, till all the different breads are done. *Shot in Anton Bakery, Colvale. 2017* *The oven, called the forn is laid by hand, layer by layer using sand, stones and glass and packed outside with clay. The cavity inside is lined with stone tiles and laterite to keep high temperatures and also to retain optimum heat. Typically dried hard wood like tamarind or jamun is used. The burning coal is spread out time to time with a wooden spatula to make sure that all corners of the oven are heated evenly.Shot in Gomez Bakery, Aquem Alto, 2017* *The poder rolls out the mixed dough by hand onto a large platform to allow it to rest and rise. The proportion of yeast, flour and water is carefully monitored based on seasonality to ensure perfectly rolled dough everyday. In the earlier days, toddy was used to ferment the dough which gave the Goan bread its unique flavor, texture, aroma and identity. It’s hard to find toddy tappers in the Goan villages, so the bakers today use commercial yeast to prep the dough. These are specially made for diabetics and popular at dinner time.Shot in Gomez Bakery, Aquem Alto, 2017* *The balls of dough are hand rolled in bran, and once baked form a pocket within much like pita bread. With a slight sourness, the poie bread is the most popular, with some bakeries making around 500-700 a day.Shot in French Bakery, Aquem Alto, 2017* *The bread is baked twice a day in the forn. Different breads need different temperatures to bake perfectly. The poie is baked first at the highest temperature, and then the katriche pao, regular pao and last to go in are kankana which are hard and crisp.Shot in Anton Bakery, Colvale, 2017* *Kankana, (named so because of its bangle shape) a traditional bread eaten with evening tea is baked last in the forn. It is kept inside in lower heat for a longer time giving it a hard, crusty texture.Shot in Anton Bakery, Colvale, 2017* *Locals eat the kankanas by softening it in a cup of hot tea. Although owing to factory made biscuits the practice is lesser now, a few older bakeries like this still bake a small batch everyday. Pop and soft rock flourished, there were no Govt restriction or late night limits and the young people in Goa were happy and carefree with new cultural influences in the immediate years of Indian rule. I second your sentiments about the wisdom of our respective parents.My Dad especially used to quote proverbs such as "Mens sand in corpore sana" or a healthy mind in a healthy body Do unto others what you wish others do unto you Early to bed, early to rise, makes a man healthy wealthy and wise Be nice to your friends children and your friends will be good to you Never borrow, never lend, if you wish to keep a friend Not all the proverbs come to mind at this moment but when I recall them I will post them. But these are pearls of wisdom, that are always on my mind.Parents had the wisdom of their years, and they tried to pass it down to their children. I am eternally grateful to my parents.

Well, there is Ilar or Mang-ilar, which is as good a Mancurad, but comes later on in the season and is bit prone to having bugs inside. Most Goans must have tasted other varieties like Xavier, Monserrate(muserad), Colaco -- and the pronunciations may differ on how the vendors utter them! My next best choice is Mussarat which is a very sweet fibrous mango which some people don’t like to eat and instead make mangado (jam) from it. People from Coastal West India will be hard pressed to decide between the Goa Mancurad and the Ratnagiri Alphonso for the best-mango vote. I am among the undecideds. Alphonsos are currently being sold for C$30 per doz in Toronto’s Indian stores. You can get the mussarat-like (as large and as sweet) Hayden mangoes from Mexico, a delicious fruit for just $10 a case of 14. My personal likes include guava cheese (misnomer) which you get here in nicely packed tins from Chile and Ecuador which however you cannot spread like the Goa-made kind and Satam, a dried and pressed papad-like shaped item made from the soft jackfruit variety. [Goanet] Our Parents Were The Internet
Before information was rife, our parents were a good source. Mostly we dismissed their good advice because there was no evidence for it and we dismissed the source since it was only from their parents they learned it. My generation were not the inheritors of the internet, like our children were, in the sense not born into it, just acquiring it during our lifetime. Therefore we must say to our parents who are long gone, a silent ‘mea culpa’ for all the good things they taught us but which we negligently cast off. For example my mother used to tell me to get into the habit of drinking lots and lots of water. The usefulness of that advice seemed doubtful to me but now I am able to read the evidence for the reasons, how it improves kidney function, removes the toxins of food, drinks and the medicines we end up taking, the avoidance of dehydration and the restoration of the lost acidity of the body. My father used to insist that I go early to bed and rise at a reasonable hour. Woe begone those frequent late night parties, or studying well after midnight or even watching TV or reading well into the night for leisure. We now discover that there is evidence of absolutely no substitute for a solid eight hours sleep at the right times of night. Lessens stress, equips us for an active day and even prevents Alzheimer’s at a later age. If I was a Zombie sometimes, it was because I didn’t listen to them. Meldon Silva scored for the Gaurs in the first half, while Gilbert Oliveira made things square in the second session. The first attempt in the game was created by Leny Pereira of the Salgaocar side but he shot wide. At the end, Kingslee Fernandes received a well-placed pass from Liston Colaco but the formers strike went inches away from the goal. The Salgaocar side kept trying to score as Agnelo Coalco came close on two attempts, but he failed to get his shot on target as the Salgaocar side kept lurking for an opener.
