Just be there at 5 pm sharp! -------------------------------------------------------------- CULINARY CORNER * Special from Daisy Rodrigues [EMAIL PROTECTED] -------------------------------------------------------------- TUNA CASSEROLE 2 tablespoon butter, 1 cup thinly sliced mushrooms, 1/4 cup finely chopped green onions, 2 tablespoon white flour, 2-1/2 cups low-fat milk, 1 cup grated cheddar cheese, 2 (6 oz) cans tuna, 2 cups cooked egg noodles, 1/4 cup parsley, minced, 1/2 cup dry breadcrumbs. Preheat oven to 375. Melt butter in saucepan over medium heat. Sauté mushrooms and onions until just tender, about five minutes. Stir in flour and cook for 1 minute. Remove from heat and whisk in milk. Return pan to heat and cook, stirring, until it thickens and almost reaches a boil. Remove from heat and stir in cheese (leave a handful of cheese to sprinkle on top; stir until melted. Drain tuna and break into flakes. Put in a large bowl and add sauce, cooked noodles, and parsley. Stir together and pour into greased baking dish. Sprinkle top with breadcrumbs & the remaining cheese.
