I took a class on organ pipe pleating at a War once - best thing the teacher did was to make us actually do some of it in class. Maybe you could provide everyone with a piece of fabric, perhaps already lined as another person suggested and get the students to mark, gather and attach it to something? One tip is to line the top of the fabric to be pleated with evenly checked gingham.
