Possibly one might have a sleeve for everyday and then a special sleeve set for special occasions. In some regions the sleeve and the placket seemed to be the only thing majorly embellished (these would be for special occasions). I love the woman in green in the back of the center one. Her sleeves are still attached to her bodice, but her arms aren't in them, and they're pinned (I assume) behind her, out of the way. Also, detachable sleeves are much easier to fit, since they don't have to be eased into an armhole. They had detachable sleeves so they could vary their outfits, and if one got damaged, or soiled, they didn't have to clean the whole garment. Often women had sleeves and forepart matching, so you could have a basic gown, in black, for instance, but multiple sets of sleeves and foreparts (which use much less expensive material) and vary your look easily. I know at Faire, we remove our sleeves if it gets too hot.
