Could this book be The alphabet of Creation, by Ben Shahn? I don't 
have the book, but I remember it. It is out of print, but some 
Amazon.com resellers have new and used copies.

Could you be thinking of the Aleph-Bet Story Book by Deborah Pessin, 
published by JPS. The stories are not about how each letter got its 
name, but there's a story for each letter that relates to its name. 
The first one is about creation. As the book progresses through the 
aleph-bet, the stories go through the Tanakh and later Midrash. Even 
if it's not the book you're looking for, you'll like it.

I believe the book you are looking for is The Aleph-Bet Storybook, 
long out of print, but still wonderful stories. It's a 1946 
copyright. The author is Deborah Pessin.

published by JPS.  I think the cover of the one we had was 
reddish-brown (or brownish-red?).
