Whether you want the whole document loaded or not is entirely your personal perference. However if you don't do this, many things will not be available/work as they should. You cannot for instance search a document if you don't load it all at once. You can't get a list of links. Etc, etc. I personally use Qread for pDF documents nowadays, if I just have to read and not edit them. It loads them all extremely fast and has no issues.
