That's because the menu width is calculated to not be wider than needed, and those sub-menus don't have any additional elements that make them as wide as the parent menu. If we made these sub-menus wider to have them conform to some minimum width, where would that extra width go? Off to the right? I guarantee you we would get bug reports from people complaining about the pointless extra space.
