Nate your call, if you can somehow reproduce this bug, you might be able to
find a fix using your assumption of what happened.

Shortcuts has been working fine for me, but this one seems like it was
definitely an edge-case.

It could have, if the app's .desktop file or binary name changed. Then the
shortcut you set would be stuck pointing to something that no longer existed.

Not sure what caused the shortcut to break, it could have happened after
LibreOffice update? I know the rest of my shortcut remained valid and and
functioning.

It may be working for you now (yay!) but it would good to know why it broke in
the first place. Is it possible that LibreOffice's binary or desktop file
changed in an update, such that the old shortcut was targeting something that
technically no longer existed?
