Give a quick search for "bullet journals" and you'll see exactly what I'm referring to. In a bullet journal the bullets change in a task list on different factors such as completed, high priority, etc. It is a very popular way to journal and usually done in a paper notebook. Unlike a task application a bullet journal is a more detailed way of organizing thoughts, priorities, and anything you want. Just choose the customise tab in the bullets and numbering diaog.
