That's might be a question which can be asked at bug 129734. The 4.3.0.4 version being caused by me :-). I trimmed it down.. while tracing it back. How hard would it be to make LibreOffice display "Spanish (unspecified)" (or
"... (unknown)" or something similar) for situations like this? The ISO code
with curly brackets looks really cryptic to an ordinary user.

There's nothing wrong with that. The document contains a default paragraph
style with
note fo:language="es" fo:country="none" so {es} occurring in the language
list is *expected*. The style is listed in the Stylist as "Default Paragraph
Style" but apparently not applied, see its properties the Language {es} is
assigned.
However/whoever/whatever ((template) extension?) created that style, the
generator of the document is an ancient
LibreOffice/4.3.0.4$Windows_x86
