Lockups occur mostly when copying/pasting with CMD+C/CMD+V, but even when just scrolling through a table with the mouse. I know it's hard to test as you saw it randomly, but you could try a master build from https://dev-builds.libreoffice.org/daily/master/current.html To run it, see https://support.apple.com/guide/mac-help/open-a-mac-app-from-an-unidentified-developer-mh40616/mac Set to NEEDINFO.
