If the Valencian localization team wants the UI name translated to "Valencià" or "Valenciano" it is free to do so. Writer, Impress, Draw: menu Format - Character - Font tab, Language field. Calc: menu Format - Cells - Numbers tab, Language field. Also you can choose menu Tool - Options - Language Settings - Languages (or secondary click the status bar on the language field and choose More), and search in the Western languages for documents.
