Just so the whole Lubuntu team is kept in the picture, I recently emailed Michael Casadevall about the documentation for the Ubuntu ISO build system, and he responded with the email below.

Right now, debian-cd is currently transitioning from livecd-rootfs to live-helper under the hood which has greatly complicated documenting it. Once this transition is complete, I'll start working towards rough documentation as it makes no sense to document what won't be the same in a few days :-/.
