Your security is improved when you move to cyanogenmod because it is (more)
opensource and to quote Eric Raymond, with many eyes all bugs are shallow.
Meaning that with more people looking at the code, there is better quality
and thus increased security.

Moving to Cyanogenmod puts you back in control of your device (unless you
are Xperia Arc S then you are screwed at CM 10.). The whole idea behind
modding and roms is to bring the fun of Linux to the world of android.

Take a look at MIUI (http://en.miui.com/ My iPhone User Interface) by the
Chinese.

Personally I flashed my Galaxy SII to Cyanogenmod
http://www.cyanogenmod.org/  due to a mixture of curiosity and a
recommendation of better security (also Orange Uganda wasn't pushing out any
updates beyond Gingerbread). Very nice Android remix, though I still want to
research how exactly it improves security.

Although apple is the shadow to linux's sun. I chalk this up to hogwash. If
the govt wants to control mobiles devices, they will attempt to control all
of them. They dont care about apple android or winphone.
