Help> Shortcuts gives you a list of lots of the shortcuts for whatever
bind file you are using.

Note that you can also do: Alt-P + Space, then start typing the name of
what you want.

The system depends on the bind file you use. As far as I know the  
emacs-like shortcuts do have a (weird) system, not easy to learn. I use  
cua (common user access). You can print out a pdf with all shortcuts:

Bo Peng has modified standard shortcuts (same link) and added "Theorem"  
etc. shortcuts.

If I’m in a description list and simply take CR at the end of the first line, 
the new paragraph will be a new description item. But I don’t want that (in 
this case) – I simply want a new paragraph so that the new sentence (“Note 
that...”) is logically separated from the first sentence of the description.
