iPhone backup and restore

Hello, 
Does backup and restore of an iPhone to iTunes just backup my Apps and their 
associated data, or does it also backup and restore IOS? 

If I backup an iPhone 3GS running IOS 6 and later restore that to an iPhone 5S 
running IOS 8 will the iPhone 5S now be set to IOS 6?

No. When you do a backup with iTunes it just backs up the data currently stored 
on there. Any apps not in iTunes will also be transferred. You cannot backup or 
restore iOS.

The IOS will not be affected by your back up, so the 5 will still have IOS 8 on 
it -

I once copied the phone from Linux once, and I've wondered if I used Linux 
to wipe the phone, and paste in the old, if it would revert it to what it 
was when I made the copy.
Linux just saw it as a drive.
