With focus on an item in the notifications list, VO-Command-Space gives 
you a secondary actions menu with an option to clear all notification 
from the particular application.

Hello,
As a VoiceOver user on the latest Bigsur how can I delete a notification I have 
just read and how can I delete all notifications. Google search tells me how to 
do this but assumes I can use the mouse.

Hi

For me, I open the mail message with return, then interact with the Messages 
header area, then navigate to the name of the sender, and VO-space on it. A 
menu pops up with the senders email address as well as the ability to copy it. 
Now, this does not always work for others I have found, but it may be worth a 
try for you.
