Have you tried adding “and none of the following mailboxes” - 
mailbox “sent” in the mailboxes panel of the smart mailbox?

I didn’t try if this works as I would expect it, but maybe the 
condition

[Source] [is not in] [Sent Messages]
will do the trick?
