I get replies pointing that it is being balanced to different backend
servers: dam09, dam10, dam12, dam15, dam17.  As well as immediate
disconnects which are probably happening when it's unable to pass the
connection to the chosen smtp service.

You could report the spam as well through the national CSIRT:
incidenc...@incibe-cert.es

I've tried to report some spam to orange.es, this report is stuck in our 
outgoing queue:

(host inc.wanadoo.es[62.36.20.20] refused to talk to me: 451 Temporary local 
problem - please try later)
 ab...@orange.es

Manual telnet session from my home IP works, from my private server gets an 
immediate disconnect.

Does anybody know what's up with them?

More than that. Still only a drop in the ocean when it comes to an ESP
that sends billions a day, of course. We are no Microsoft or Google.

Any mail received at our spamtraps, of whose composition you might
have a fairly decent idea, identified as being sent by SendGrid. As
I said and you quoted it back at me,

So, as to whether it was spam or not: you have to indicate your definition
of spam first, and then it becomes possible to at least attempt to have
that conversation with respect to this data.

And you just seemed to say that it was all sendgrid, not taking into 
account whether it was spam or not.  Correct?

the patterns look the same since jan 1st for recycled and pristine traps:

there is a dip between apr 5th and 13th... other than that I don't see
much of a difference

I don't see any drop in volumes here.   I just spent 10 minutes
looking at anything hitting traps today from Sendgrid ASN and soon
found plenty of concern:
