The basic idea would be to make it fairly easy to dump stuff in the 
disposer and it goes into something that I could deal with at my 
leisure, and not be filling up a can by the sink with veggie stuff,


Out of sight, out of mind.  I don't think a fully automatic system
is possible, so you're probably best served by keeping your bucket
small, and requiring relatively frequent servicing of it.  Else you'll
have a huge rotting mess to deal with periodically, turning a frequent
easy chore into a periodic, messy project.

30 + years ago I purchased an insinkerator-type disposal hooked up to
a cheap plastic bucket, dubbed an insant composter or some such
moniker.  I ground up kitchen waste into a noxious slurry, but
couldn't figure out a good way to turn this slurry into compost.  It
just sat on the ground and turned brown.  Yuk.

How about hooking it up to something like a composting toilet? I am no 
expert on what is in them but essentially a means of turning the compost 
periodically and a fan for odour removal and maybe a heating element to 
dy out excess moisture seems to be mostly what is talked about on web 
sites that describe them.

My local control system makes sure it gets emptied often, whether I take 
it to the compost bin or it goes into the trash.
