Here's one:
Device Type: Windows
Condition type: Setting
Setting Type:  WQL
Data type: String
namespace:  root\cimv2
class:  win32_computersystem
Property:  model

to use, if you want to target something that is NOT virtual, then:  'does not contain'  Virtual
if you only want to target Virtual, then 
'Contains' Virtual

I like that one because it's very versatile.  You can use if, for example,
you need to specifically target Model xyzz333.  You can say the GC equals
'xyzz333'.  You can also do "one of", to target multiple models in the GC.

Does someone have a simple walkthrough on how to create global conditions for 
if something is a virtual machine or if it is not a virtual machine?

I'd like to prevent some applications from deploying to VMs needlessly.
