CopyProfile is garbage and should never be used. Automate, never look back.

If you did all your installations and configs using the built-in profile can’t 
you just set the copy profile to true in your unattended.xml so it will copy 
those stuff to the default profile?

part of your Windows 7 OS deployment?

You will need to script the pinning of items.
