Perhaps some elisp guru can tell us. It seems like the easiest thing would be to have notmuch just prompt the user for what they would like to do with the attachment. It works pretty well and I use it to synchronize my mails with IMAP server. I think that these pathes are ready to be merged. What regards using git to store mails and synchronize tags, I still have plans to work in this area, but currently I have more important work to do.
