Many years ago when I was photographing a bunch of blues dancing in crazy low light, my friends with u4/3 had much better luck focusing using the f/0.95 lens and focus peaking on manual focus than I did with the Pentax. EVF has its advantages and its disadvantages. I suspect that it would not work well for John shooting motorsports, but for any subject that is reasonably static it should be good enough for framing, composition etc. In very low light it is often much better for things like composition because you can actually see what the camera will see. The EVF on my Olympus E-m1 Mk II is very good. When I first looked through the camera I didn’t realise it was mirrorless. That model is quite long in the tooth now - I assume they have improved on it in more recent models. Last time I seriously looked which was a couple of years ago, I tried out a high end Olympus and a high end Fuji, I was seriously impressed. There was an occasional lag and the image looked a bit artificial, but seemed usable. I thought a K mount camera with a good EVF would be fine for low light work, though I'd prefer a DSLR for any conditions where "I" could actually see. How good are the EVF's on the latest mirrorless cameras. The one on my wife's Fuji is rather blurry at high zooms. Sadly, the K-01 didn't have one. An optical turret or a loupe are possible options.
