Is there any special reason that r.watershed was not included in the
 GRASS Tools modules list?

 (before I jump in to write my own xml file for that module).

Hi all,
no, nothing particular reasons.
Not all the idrological modelling modules are included in QGIS only
because I prefer start from the basic modules. I'm working to insert the
lack modules in the 0.9.2 version.

 next release.
 Meanwhile I guess I can just write a simple XML file for r.watersheds
 and add it in the proper place?

Yes, but remember to add the module name also in the default.qgc menu
file placed in config directory.
