But I'm using the standard squirrel installation in the qmail toaster virtual appliance.. is there some way i can edit the squirrel hostname? Squirrelmail parameters are in the /etc/squirrelmain directory. The config.php file contains base (stock) package parameters. You can make modifications in the config_local.php file. Looks like $domain might be what you're looking for.
