It'll be some time before that authority ages to ripeness here. We have a 
handful of actual cheese mongers in various wholesale/retail ethnic food 
distributors in a part of town named by its description as the strip of 
land between the Hill and the Allegheny River. There in the Strip District 
I find all sorts of great foods, fresh authentic and unbelievably 
affordable without the grocery brand distribution complexity and mark up.

That lady can pick a cheese and can knock a half ounce sample from one 
those wedges with her 24  cheese knife. I stood in line there last 
Christmas week holding number 425 and they were serving customers in the 
130s. Worth every minute before loading my goods and riding home.

Sad to say, as much as I love cheese, I have very limited experience with 
the really good stuff.  One of the higher-end local grocers was giving out 
samples and I tried a bit and it was heavenly.  I don't know where it fell 
in the overall scheme of quality cheese but I know it was about $20 for a 
wedge that was maybe 1/2 thick and the spine.

Fishing helped get me back into biking after a long hibernation.  A friend 
and I started heading out on pre-dawn fishing trips carrying beer,ice, and 
fishing stuff on our backs. About a decade later, He's still fishing but 
not biking a lot.  I'm still biking but not fishing at all.  Got tired of 
too much fishing and not enough catching. Would be easier hauling stuff now 
that I have a rack and panniers, h.

[RBW] Zefal HP pump question

with a Zefal HP frame pump. However it's a Schreader head (AFA, made in 
France), and I'm going to use presta tubes.  Is there a insert for the AFA head 
for converting to presta, or can I completely change the head if it's removable 
(is it?).

The best way I have found to deliver a heavy oil is thus:

Clean the chain off with 99% rubbing alcohol.

Saturate the chain with WD-40 and wipe it off. Re-apply until the WD-40
coming off is completely clean.

Spray the chain again with WD-40 and then drip a single drop of the heavy
oil into each pivot. The WD-40 provides a film that allows the heavy oil to
slip right in.

Now wipe the chain off until the outside is completely dry.

You now have all the oil where it is needed, and none where it will attract
dirt.

If it's anything like the HPx, just unscrew the valve, flip the rubber and 
hard plastic dealie-boppers around to fit Presta and presto! Grin. My Zefal 
HPx from 1988 still works great and is set to Presta.

Adding a little to what Deacon said.  

1.  If it's OLD, like from the late 80s or earlier, it is not convertible.  
You'll unscrew the cap and a rubber thingy will come out, along with a 
spring, and maybe a flat washer, and get confused.  Too bad.  Put it back 
in and get a presta valve adapter  if you want to use that pump.
2.  If it's newer than that, Deacon is right.  Under the cap you will find 
a rubber part on top of a plastic part.  Remove them BOTH, invert EACH and 
put them back in, plastic part first, rubber piece on top of that, then 
screw cap, and Robert is your father's brother

[RBW] Bullmoose changes?

So I am considering picking up a bullmoose bar. Preferably like the one I had 
on my old Bombadil which I believe was different from the current offering. 
Mine was the clear coated version and I seem to remember it being shorter than 
150? Were they 130? And I also notice some pictures appear to have much more 
sweep? I think a shorter length would be best unless the 150 sweeps back 
considerably farther?

Am I shopping preowned?
Am I making things up in my head?

I have a couple of different extension versions in the garage. Both older. One 
was clear coated 200 extension. One grey powder coated and looks like 150. I'll

Joe -- thanks for this. I wonder if my nearby True Value has anything like
this. I suppose that the canola/rapeseed oil in question has been treated
with additives, but I like what the article says about the lubricity* and
shear stability of such oils.

Canola oil sounds interesting :) 
The heaviest veg oil I know of is Castor oil, man, that stuff is viscous !  
Isn't  that the origin of the name Castrol ?  :)  

Can you just use the factory lube of a new chain and apply it over that 
when necessary ? I don't prefer to clean chains at all any more, as I find 
all the good degreasers are either diesel, kerosene or wd-40. Kinda yuk.   
The Soy cleaner that Riv sold I found poor. I had tried some citrus 
degreasers in the past and none of them worked either. I'd love to get off 
the petro bandwagon altogether for chains and keeping them clean :)

I attempted to make it out of town, but I was too late and the throngs of 
tourists in town for the 10 day art show and their perfume and laundry 
detergent and other scented accoutrements were already out and creating a 
wall of scent I was too wimpy to make it past. I was pushing it to try a 
ride, though hopeful it would help. Might have if it wasn't tourist season. 
First time that's happened. So I rode the quarter mile with an overage 
speed of yea much out and three yeas back.

[RBW] Bike rides to cheese makers?

So, to a) get our cheese talk on topic, and b) support cheese makers and 
making... There are some nice cheese places I could ride to from my house.
Out of Petaluma to the oldest continuously operating cheese operation in 
America... http://www.marinfrenchcheese.com/ 
Out to Point Reyes to get some Cowgirl Creamery cheese. And finally see Black 
Mountain Cycles from the inside...

In Oregon where I used to live, there's Briar Rose Creamery in Dundee. I don't 
know if they do tours or drop-in visits yet, but they are up a pretty scenic 
steep road.

Are there any interesting destination cheese makers worth riding to in your 
area?

I did a Fat Tire Bike Tour in Amsterdam where we rode out to a place where 
we got to make our own cheese.  They encased it in some waxy stuff so we 
could all take it back home.  Great fun.  And it was a pretty good stroll 
out there too.  I wish I would have had my Rivendell and not that cruiser. 
 But anyway :)
