I went 1x9 on my Karate Monkey and I don't have any interest in ever having 
more than one chainring on a bike.  At this point, I think I really want to 
look in upgrading to a Rohloff in the next few years.  Low maintenance, 
wide gear range, simplicity (from the perspective of keeping the indexed 
shifting tuned) and convenience are what I'm after and I think the Rohloff 
checks all of those boxes.

It's pretty incredible how much of our foods have sugar added and how hard 
it can be to find simple nutritious foods like yogurt without it. 

What qualities of Bob's bread flour make it better than other bread flour? 
I don't use their flour, although am a fan of other products like the 
cornbread mix, but make plenty of naturally leavened bread with many flour 
mixes. If you like the results of your bread with Bob's bread flour then 
keep it in, I usually make a basic sourdough loaf with a 50:50 ratio of 
bread flour and whole wheat, sometimes mixing whole wheat and white whole 
wheat. The higher protein in the bread flour gives the rise and chew while 
the whole wheat adds flavor and nutrition. Maybe your experiences with 
other flours are just a result of their age? Like most foods flour is best 
when fresh. Milling your own or getting access to fresh locally milled 
flour could be what you're looking for in your bread.

There's no reason to add vital wheat gluten to bread (there's plenty 
developed thru kneading) but you could add wheat germ if you're looking for 
the added nutritional value

Nice! I got a Jones recently as well with a 2x9 setup which I'm happy with 
(trigger shifters) and have had no issues with, but am thinking of a 1x9 or 
1x10 on my hunqapillar (or just sell the hunqapillar). What is the crank 
you're using? Are you using indexed or friction on the shifters?

my Jones Plus and I can say it's the best improvement I've ever made to a 
bike. I was having major trouble with chain drops and poor shifting on my 
2X9 setup so I converted to 1X10 using a Wolf Tooth 32t ring, XT clutch 
derailer, the new Sunrace 11-42 cassette, and a Microshift 10-speed thumb 
shifter to replace my Silver shifters. The psychic liberation of not having 
to even think about a front derailer, gear overlap and cross-chaining made 
shifting a breeze and helped me to be more present in the ride. Also helps 
that I wasn't having to stop, don a nitrile glove and curse at my FD! I 
found that I lost nothing that I needed on the high gear-inch end, and I 
still maintained my exact same low gear from before. 

My riding performance priorities are: 1) capable and easy to use mountain 
bike 2) reliable commuter 3) gravel/dirt bike with adequate gear range. 
This setup seems likely to nail all of those with aplomb, though I haven't 
had a chance to mountain bike with this rig yet. I expect that the ease and 
improved reliability of shifting will allow me to get better at climbing

Have you ever added Vital Wheat Gluten to your 100% Whole Wheat flour 
recipes ?  It's often listed in bread recipes as optional, but most people 
don't know what it is. Gluten is what gives bread elasticity, chewiness and 
crusty crunch.  It's widely available at stores that sell Bob's and all 
like brand products. Many different manufacturers off it.

my Sam Hillborne with Albatross bars.  It was a fully supported ride, 
meaning they carried our gear in a van.

I am by no means an anti-carb fiend, but this seems to be a good summary
marshaling at least historical evidence against low fat, high-*refined-*carb
diets.

That said, once again, the Japanese (among many others) have not been noted
historically for their obesity, heart problems, and brevity of life.

And that said: does anyone know of a *whole wheat *equivalent of Bob's Red
Mill bread flour? I mean by this question: has anyone personally used, or
have second hand information from someone who has personally used, a whole
wheat bread flour that is to ordinary whole wheat flour as Bob's Red Mill
while bread flour is to ordinary unbleached white flour? I don't see any
Bob's whole meal *bread* flour available online. (Bob's makes good bread
always; regular flour doesn't produce as good results. I've taken to mixing
white whole wheat flour into my Bob's at about a 1:3 or 4 ratio.)

The CX70 comes with a yoke rather than a straddle wire set up. I believe you 
can toss the yoke and make your own straddle wire to adjust the height but out 
of the box it's not set up that way. 

This is all from memory so I could be wrong.

It does interfere with the rack mounting hole. I had to use a different 
straddle wire with my Nitto M12.

I got my first Bstone courtesy of Piedmont (next door to Oakland) bike thieves. 
My brother, who lives there, had his MB-2 stolen and after waiting half 
heatedly for a couple weeks bought a new one. Then, the police returned his old 
one which he then sold to me for a friendly price. Since then his and his 
wife's bikes have been stolen again at least one more time, but has since moved 
to a different area. Nothing to do with bike security though, as they were 
stolen when he was working around the house and had the garage open.  Pretty 
brazen thieves.

I hang my bikes from the ceiling on hooks alternating facing front back. I use 
a long cable and lock that wraps through all of them then lock two frames 
together with ulocks. I figure this way if they cut the cable lock thieves 
still would have to lift two bikes off the hooks and one of them is going to be 
upside down.   If they can't break the ulocks then to get the bikes out they 
better be pretty strong...weeds out the heroin junkies.  I also leave a couple 
"donor" bikes unlocked and my hope is they leave the good stuff and take what's 
easy.

I also drill holes in concrete to secure my bikes.  Kryptonite makes what 
looks like a nice floor anchor, but I normally just buy an eye bolt (and 
epoxy) from the hardware store large enough to pass a fairly thick cable 
eye through.  I'd probably consider that and a Kryptonite chain as the main 
security, but still wrap a cable or two to secure the wheels.  After that, 
I'm not sue what else you could do. 

I have a hammer drill you can use if you don't mind a trip to the north end 
of the Berkeley Hills to get it.
