I have VO Al fenders on my Saluki with 38 mm but feel sure I could fir 41s 
if I wanted too, but it would be just a bit tighter than optimal.

I don't know how helpful I will be, but I have a comment on each.  

1.  I tried Honjos on my 650B Hilsen (2010), and was not satisfied with 
clearance around Hetres.  I returned to SKS plastics, and then decided 
clearances were even better with Lierres, which are tremendous tires.  When 
I wear through a pile of Lierres I'll try the 38mm Compass offering.  I 
only run 42s on my Hilsen when the fenders are off.  I like having a full 
10mm on top and 5mm on each side with fenders.  I couldn't get the 10mm on 
top, so I wasn't satisfied.  I might be too demanding.  

2.  I haven't had stainless powdercoated, but I did pinstripe them!

Tony,

I've fit those Berthoud 50's, the ones Mike Kone sells @ Rene Herse online 
on my Saluki/54 running Heters (and now EL Babyshoe Pass) without any 
issues. It's tight, yes, and not ideal in the BQ  /Peter Weigle sense, but 
I've never encountered an issue -- though once I nearly caught a squirrel 
in my front stay -- but that's another story altogether. Sorry I don't have 
the proper chain stay bridge shot but if you need one to be convinced just 
let me know and I'll iPhone it for you:
