I use the same set up and have gotten good service out of Aztec pads

I run my saluki with 38 mm pari moto tires, paul's neo retro canti's and 
shorty pads.  The standard pads are, as you have discovered, too long to 
clear the fork.  I talked to pauls about this and they said building a 
brake that is further down the rim increases the probability of brake 
shudder.  I suppose with the weaker shimano brakes this is less of a 
problem.  I haven't noticed any difference in the braking with the shorter 
pads.

Paul's brakes are expensive but they will last forever and all the parts 
are readily replaceable.  Plus, after the early learning curve you will 
discover they are very easy to set up and rarely need adjustment.

I have been running the Shimano CX70 brakes on my Hunqapillar.  These 
brakes definitely clear the front fork when opened wide, no problems there. 
 Set-up was easy, but I have to run the brake pads really close to the rims 
to get good stopping power.  I used barrel adjusters to dial in the pad-rim 
distance into perfection, but whenever attempting to remove a wheel, I 
could not get the brake straddle wire to release without undoing the barrel 
adjusters.  This is not a huge problem, but nonetheless it is not ideal.

A few nights ago, I took the CX70s off the bike and put on some Paul 
MiniMoto linear pull brakes.  I haven't had a chance to ride them yet, but 
the set-up was easy.  With those brakes, it seems that the maximum tire 
width would be around 42-45 mm, since the connecting wire runs close to the 
tire and these brakes do not clear the front fork when open.

Not on a Saluki. I have them on my 1993 X0-1. They're excellent brakes. I 
have some circa 1996 Shimano Deore XT brakes on my AR...not nearly as good, 
not nearly as easy to use. I may upgrade those to the CX70's which are 
designed to solve the problem you mention. A bit spendy  but worth the money

I just recently put Velo Orange 
Zestecanti's
 on my Hunq.  So far I am really impressed with them.  They have a 
lot of power, use regular road size shoes and flop wide open when I change 
wheels.  That was a big plus since I change wheels frequently on that bike.

the Paul Comp brakes sit out a tiny bit farther.  So with the CX short 
brakes they clear the fork on most bikes.
