I haven't tried it to make sure, but I think winbindd will only assign UIDs to people that do not already exist. Just create users on your system first for those people who need login access, then let winbindd assign the defaults for everyone else. The linux box I am setting this up for will basically not have any local accounts, so collisions are not a problem, and it will only be accessing one domain so there is no need to differentiate users based on their domain. It would be nice to have the NT and Linux usernames be the same.
