Yes you can use iPeng and yes you should be able to also use a Boom.

Daphile looks *really* appealing. From the screenshots, it looks like
Daphile has it's own UI. Is this merely a re-skin of LMS? Specifically,
would I still be able to use the iPeng app for controlling the my
listening experience?

Also, can you confirm whether I'd be able to support a Wi-Fi connected
Squeezebox Boom in addition to the direct connection to the DAC on my
main system?

A very good option to achieve this is using Daphile
(https://www.daphile.com/), which is a custom built Linux OS aimed at
specifically this usage: LMS + directly attached DAC.

Sure - simply install a player, such as Squeezelite on the LMS machine
and plug in your USB DAC ... good chance it will work but try before you
buy.

Is there a way I can configure LMS to output directly from the server
via it's USB port (in addition to Ethernet)? It's been done on the
rather expensive 'Innuos Zen Mark3'
(http://www.innuos.com/en/catalog/go/zen-mk3-1tb-hdd-black). I'd prefer
to build my own audiophile grade computer and run LMS, but I'd prefer to
bypass Ethernet - at least for my main audio room.
