Some bottlers actually freeze the bottle necks, 
remove the hollow plastic cork (which has the dead yeast in) and re-cork after 
adding sugar water. I try to judge the fermentation so I can bottle clear wine 
and still have secondary fermentation. I could use a hydrometer but 
its more fun my way as I like the danger.  Chris.

They sure do go off with a bang, I've lost gallons over the last 30 years 
due to getting the fermentation wrong when making sparkling Perry.  Chris.
