 1. Drag the message to your Outbox folder.
 2. Open it (double click on it)
 3. Edit subject
 4. Save it (don't send it)
 5. Move it back to original folder

As you say, it is probably the easiest method. However, you must be
aware that this method does change some of the original RFC-822 header
lines. For example see your own message I am replying to:

Good point. The solution is not perfect, but likely suffices in
most situations. I solve (actually avoid) the problem by not
adding the e-mail classification to my Subject: line.  This was
already suggested.
