I've established the root cause of my problem... I had the %ACCOUNT
macro in the folder template. If this is used, the Reply-To: header is
always left blank. However, I'm not sure if this should happen.

I'm wondering if we're at cross purposes? Typically, I don't use the
macro and every thing is fine; I do set the identity. Also, I don't
display the Reply-To: header in the editor under normal circumstances.
However, if I do, it doesn't display an e-mail address unless this is
set by the %REPLYTO macro.

I'm just wondering if this is normal, if it's a bug or if something's
wrong with my set-up.

That's the point. I have set this in Properties/Identity. It only seems
to work with %REPLYTO.

I was about to suggest this... but you beat me to it! ;-)

What I've noticed though is that the Reply-To: header field in the
editor window remains empty. It's the same if I use %REPLYADDR. Anyone
else see this?
