Confirmed on Ubuntu 18.04 Unity, fresh install, latest LibreOffice 6.0.3 from repo. I disabled "show date" and "show day" from settings, then in dconf- editor I set custom-time-format (under com.canonical.indicator.datetime) to '%a %d %B %H:%M' and time-format to 'custom'.
