I was experiencing something very similar to this and stumbled across
https://bugs.launchpad.net/ubuntu/+source/gedit/+bug/1376494 which
suggested installing ibus-gtk.

1. sudo apt-get install ibus-gtk
2. reboot

Now my gedit seems to work fine.

Attached are the screenshots of what is happening. As you can see, the
first paragraph is always wiped out if I have multiple paragraphs.

I am using Evolution 2.24.0.

I just upgraded my package set in Intrepid and now Evolution is at
2.24.1.

However, I am still experiencing the exact same issue as before.

I'm a bit inexperienced with launchpad, so I'm not quite sure how to
forward it upstream to bugzilla.gnome.org.

Public bug reported:

Binary package hint: evolution

When keep signature above the original message on replying is selected
in the preferences, the signature will be inserted above the message you
just typed if you switch accounts before sending (and after typing
out) your message.

Steps to reproduce:

1. Set up two accounts in evolution.
2. Set up a signature to be used for the non-default account.
3. Specify a signature of none for the default account, and the signature you 
set up in step #2 to be used for the 2nd account.
4. Begin writing a new email with the default account (with a signature of 
none).
5. Before hitting send, switch the from account to the account with the 
signature.

On my machine the signature is inserted at the top of the message.

Beware: I just dist-upgraded from gutsy to hardy and the listed
workarounds are no longer solving this issue for me. I have to set sudo
hdparm -B 255 /dev/sda manually each time I resume the computer,
otherwise I am getting 5-10 clicks per minute.
