I am well aware of this bug, I have actually fixed it in the build I am working on for the upcoming LTS. I had some larger bugs I wanted to work on first (do you remember when you had to run LMMS from a terminal??) before gettting the icon to build a png file, instead of the old school xpm. I have tested the new icon and it works and looks nice in Unity as well as LXDE. Basically the 'rules' file is very outdated, and I am not debian packaging superhero, so it take me a little bit of time to figure things out so I can fix the bugs one by one. So when I finished with the other bug (LMMS depends on wine, it should be optional in lmms-vst package) this bug will already be fixed. Thanks very much for taking the time to improve LMMS!!
