Thank you for reporting this, and trying to help make Ubuntu better.
However, this is the expected behaviour of apt-get remove.  apt-get
autoremove should remove packages that were installed as dependencies
and are now no longer needed.

Furthermore, I'm a little surprised that removing evolution-data-server
didn't break something.  A number of Gnome apps store stuff there.

WRONG!

I used apt-get autoremove and only got as far as the first 4 packages.
I had to remove the rest of the packages manually by looking for
'evolution' in Synaptic.
