Hi,
I'm not sure yet what was going on.
It seems you are trying to remove (purge) amavis and while doing so it fails 
due to the user being still active.

>From your log:
userdel: user amavis is currently used by process 6612
/usr/sbin/deluser: «/usr/sbin/userdel amavis» ha restituito l'errore con codice 
8. Uscita.
dpkg: errore nell'elaborare il pacchetto amavisd-new (--purge):
 il sottoprocesso installato script di post-removal ha restituito lo stato di 
errore 1

In case it is fully uninstalled now, fine.
If not if this is reproducible, which means when you run "apt remove --purge 
amavisd-new" you see the same message.
Then immediately run "ps axlf" and report the full log here (the output of ps 
and the pid you got reported).

Then we could check what it was still using that user.
