I have a similar problem in 20.10. I doesn't revert completely. I have
some menues and some applications in high contrast, and I can't fix this
even after reboot.

is there a work around?

No, the purpose is to change the theme, it's used in the desktop view
but also in other graphical elements

The issue has been marked invalid for gnome-control-center because it's
not a bug in that component, it's still open and valid for the desktop
icons

The purpose of the setting is to change the desktop view.  Changing the
setting should force a display refresh.  So I'm not sure I would change
the status to "Invalid".

refresh
